what's cookin - Apple and Blackberry Crumble

fresh from the oven...membuatkan rumah ku berbau bakery hmmphh hmmphhh...

lagi entry what's cookin...entah kenapa last week tiba-tiba craving nak makan apple crumble..terbayang-bayang apple filling yang rich berkuah masam manis ditambah dengan bau harum cinnamon...aduh memang tak tidur malam beb! kebetulan memang ada terbeli blackberry (ewah kalau kt msia ni maunye org ingat 'ter'beli hp baru!) sebab tekak ni saje je gatal teringin nak rasa blackberry hehe... (which extremely masam maybe sebab dah off berries season kut)

so after a few research up and down looking for the filling recipe, i've decide to make it on my own...hehe..selalu macam tu, ye ye je salin resepi bagai last-last buat ikut sesuka hati je...

lokasi shot wajib haruslah di tepi tingkap..terkojut jugak org lalu lalang kat luar tengok ada pompuan mereng sebelah tangan pegang pinggan sebelah lagi pegang digi cam =P

personally, I prefer to add a bit of cinnamon powder into the filling...sebab ada je resepi yang tak letak tapi macam kureng la sikit..coz I do think apples and cinnamon are match from heaven, memang tak boleh dipisahkan di kala memasak dessert berasaskan apple =P

as for the crumble, maybe you can follow other recipes according to your preference...ada yang tak suka too buttery, ada yang prefer tambah almond flakes, or maybe those yang a bit calorie conscious (obviously not me haha) prefer to use less butter and add more healthy ingredients like oats, wholemeal flour or such...pendek kata sangatlah mudah membuatnya main campak-campak saje...and I do think this is the most simplest dessert you can cook up in storm, or prepare the filling in advance and save it for later...

saje je nak sepah-sapeh kan crumb banyak butter dan rangup itew haha...tapi kuah merah tu memang keluar sendiri eh, mengancam bukan? ;)


Simple Apple and Blackberry Crumble

Filling:
2 medium cooked apples like Bramley, Granny Smith, etc. (peeled, cored, cubed)
1/4 cup blackberries
1/2 tablespoon lemon/lime juice
3-4 tablespoon brown sugar
1/2 teaspoon cinnamon powder (or kalau takde campak je 2 batang cinnamon semasa memasak)
2 tablespoon water (coz i like it to have a bit of gravy...)
1 tablespoon flour/cornflour (...and i like it thick hehe)

Crumble:
175gm - 200gm butter
4 tablespoon brown sugar (use less if you want as filling is already sweet)
1/4 cup flour
a bit of crushed cornflakes ( i use my favorite Special K Oats and Honey)

Method:
1. Put cubed apples, lemon/lime juice, sugar, cinnamon powder and water into small pot. Cook over low heat just until the apples a bit soft and the sugar dissolved.
2. Stir flour with a bit of water and pour into the pot. Stir well carefully not to break up the fruits.
3. Adjust taste with more sugar or lime juice if necessary.
4. Turn off heat and slowly stir in blackberries. Pour filling into small ramekins or a tart pan.
5. For crumble; Place flour, sugar and butter in a bowl and rub until it resembles breadcrumbs.
6. Sprinkle crumble on top of the fillings, and lastly sprinkle crushed cornflakes on top of the crumble.
7. Bake in preheated oven, 180C 40-45 minutes or until the crumble browned and the fruit mixture bubbling. Serve warm with cream or vanilla ice cream and enjoy! (^-^)

by the way, buat la beb pakai apple pun sedap jek..make sure letak itu cinnamon okeh gerenti meletops!
