entah kenapa tekak ni dari 2 minggu lepas dok teringin nak makan Tiramisu...tambah2 pulak sekarang tengah layan drama Tiramisu..haha..padahal dalam drama tu bukannya ada tunjuk babak hero heroin dating makan Tiramisu ke apa....saje je gatal nak makan menambah berat badan kan? hai lah tekak... =P oh and, ni first time buat....and second time makan haha...tengok tu? bukannya pernah makan selalu pun sampai nak teridam2...pelik betul la....
so masa ada tetamu hari tu semangat la i nak buat kan...first try (yes ada first try ye sebab tak jadi) ikut resepi yang pakai kuning telur, which is kena masak kuning telur dengan susu guna kaedah double boiler...step awal lagi dah tak jadi..huhu...resepi tu memang leceh sket sebab ada guna gelatine bagai..gelatine pun buat hal tak nak larut dlm air panas...uwaa...macam ada petanda kurang baik je ni...tapi masa study resepi dah imagine dah sure sedap ni...sebab banyak bahan kan..then ada gelatine so mesti layer krim tu lembut gebus gitu...lepas tu nak menambah keharuan, si tuan punya badan ni kononnya nak kurangkan kalori..so gatal pergi beli single cream..poyo je..harusla sampai besok ko pukul single cream tu takkan naik kan? sudahnya adunan krim tu jadi runny gile..cair je...hai lah labu...ke tong sampah la jawabnya kau pergi ye...tsk. T__T
then cepat2 bersiap bawak mya lari kejap pergi kedai dekat dengan rumah ni beli cream cheese and double cream...padan muka, daripada konon2 nak kurangkan rasa bersalah makan dessert kaya kalori terus kena pakai full fat cheese dengan double cream. kesimpulannya, siapa nak diet lupakanlah niat anda nak makan dessert ni..syoh syoh pi main jauh2 ek...kita tak suka nak kawan dengan org skinny2 nih...sape yg tak kisah membesarkan pinggang dan bon bon beliau je boleh kawan dengan kita hahaha....change of plan, terus mulakan second round operasi membancuh ikut resepi dalam buku yang menjadi bahan bacaan seharian (yes, saya memang pelik baca buku resepi berulang-ulang macam novel, study bahan dan amaun dan imagine rasa mereka..food porn, siapa tak terangsang? ;P)
makan scoop scoop aje sambil layan drama Tiramisu haha..sedar2 setengah bekas ko habiskan sorang baru nak rasa bersalah pada kepadatan poket kanggaroo di perut T_T
hasilnya, walla! memang best...sedikit nota; saya buat 1/2 dari resepi asal; ganti coffee liquer tu dengan nescafe o pekat kurang manis (dats why i punya lapisan cream cheese tu tak kaler coklat sangat); dan garnish dengan sifted cocoa powder on top just before serving...yang penting kena tunggu at least 4 hours or overnight sebelum korang nak ngap...bagi rasa tu bergaul mesra dulu...kalau siap2 terus makan harusla tak sedap ye...yang penting resepi ni senang sangat, mudah nak membuatnya dan hasil memuaskan..i sokaa! =D
and pada yang nak mengawal pemakanan tapi still nak menikmati Tiramisu as dessert, skip makan nasi for your main course ye....kalau nak diet la kan...kalau ku bilang kalauuuuu....

* 10 servings
* can be made day before and kept in refrigerator
450 gm mascarpone cheese, soften to room temperature - see note below for substitution
75 gm icing sugar, sifted
125 ml coffee liqueur - i ganti dengan nescafe o pekat kurang manis
90 gm plain chocolate, grated - separuh letak dalam cheese and separuh tabur atas for garnishing tp i tabur cocoa powder je as garnishing
450 ml double or whipping cream
2 teaspoons coffee essence - tak pakai pun
18 sponge fingers (boudoir biscuits) - rasanya kalau kat kedai baking dia tulis Savoiardi kalau tak silap
1. In large bowl, whisk mascarpone cheese, 60gm of icing sugar, 3 tablespoons of nescafe and two thirds of grated chocolate. Put aside.
2. In other small bowl, whip 300 ml double or whipping cream until stiff peaks form. With rubber spatula or wire whisk, fold cream into cheese mixture.
3. In small bowl, stir coffee essence (if use any), remaining coffee liqueur and 2 tablespoons water OR in my case just use good ol' plain nescafe pekat, take sponge finger and dip into the nescafe, about 2-3 seconds for each side. (jangan rendam lama sangat nanti biskut soggy sangat) and arrange in your serving bowl.
4. Spoon one-third of cheese mixture evenly over sponge fingers. Repeat with dipped sponge fingers and cheese mixture to make more layers until finish. Sprinkle remaining grated chocolate over dessert.
5. In small bowl, whip remaining whip or double cream with remaining icing sugar until stiff peaks form. Spoon whipped cream into piping bag with large star tube. Pipe large rosettes on top of dessert. Sprinkle reserved grated chocolate over whipped cream rosettes. (i tak de la hias secantik dalam buku ni hehe)
6. Leave dessert in refrigerator at least 4 hours before serving. (kalau nak tabur cocoa powder, make sure letak cocoa just before serving, jangan letak awal nanti cocoa powder jadi tak cantik)
Mascarpone Cheese substitution
Substitute with 450gm soft cream cheese, soften to room temperature; in step 1, beat cream cheese and 3 Tablespoons milk until smooth and fluffy. Increase amount of icing sugar for cheese mixture to 80gm; beat in with 3 tablespoons coffee liqueur (or nescafe), then stir in grated chocolate until evenly blended.

Tiramisu memang aku dah lama buat. Its my one of my fave dessert to do because its so easy tapi nampak impressive.
Tapi memang betul. Aku memang tak pernah guna mascarpone sbb kat sini sgt mahal. Guna cream cheese Philadelphia je dah cukup cuma coffee tu kena power la sbb nak contrast dgn cheesy yang manis tu.
