what's cookin - Fruits Pastry Cake



kek ni buat masa birthday Anisah last week, sebagai buah tangan dan jugak spare cake in case Mya pun nak mengendeng tiup lilin jugak (which is memang pun, tengok la anak sape kan? Mya the drama queen junior =P )

although people said that it looks so cantik, my cake didn't turn out as beautiful and tasty looking as other masterchef blogger...nak tengok yang comel try jenguk kat rumah Happy Home Baking(HHB), or Nasi Lemak Lover...memang nampak tempting sangat nak try tau...mine not only the fruits sunk into the cake, it also a little bit on the drier and dense side...i wish i can blame it to the oven for this but i think i was getting a little excited and overbeat the batter hehe... (back from the party bukak buku baking and baca tips buat kek cakap tak boleh overbeat batter or the cake will be hard and dense) and maybe i kept on increasing the cooking time as i found my toothstick doesn't come clean when coming out from the cake huhu...so Sonia, if you reading this please give your advice; is there any possibility the cake will be dense if i overbeat the batter? because i only beat like crazy with the sugar and eggs and slowly stir with spatula after putting in the flour..hmpphh....

oh peach...tenggelam kau kat situ..huhu...nevermind, next time harus cuba lagi

FRUITS PASTRY CAKE

1 1/2 cups (210g) all-purpose/plain flour
1 cup sugar (200g) + 2 Tbsp. for sprinkling on fruits
3/4 stick (100g) butter
2 Tbsp sour cream (I used 2 Tbsp. strawberry flavored fromage frais...curi mya punya =P)
1 tsp. baking powder
1 tsp. vanilla essence
1 tsp. lemon or orange peel (i only use lemon juice, so maybe that is why it tasted quite bland)
3 eggs
500g fruits of your choice, just not the juicy kind

Method:
1. In a strainer, placed the prepared fruits (pit removed and cut into slices) and sprinkled them with 2 Tbsp of sugar.
2. Preheat oven to 350'F. Spray and floured a 8-inch square pan or 9-inch round.
3. Beat butter, sour cream and sugar together. Add eggs one at a time. Add flavorings. Beat til combined. Then, add in flour and baking powder, mixed until smooth.
4. Pour batter in the pan, level nicely and arranged the fruits on top (don't press). Bake for 1 hour or until toothpick inserted in center comes out clean. Let cool on wire rack. Dust with icing sugar just before serving.

Hi, I don't think I am able to tell you what went wrong. There are a lot of reasons caused the cake fail. Just make sure do not overwork at every process. From the picture, i would suggest you cut the fruits smaller and try to weight the ingredients but not using cups, I feel using cup not so accurate. And i also slightly reduce the flour . Sorry if my answer does not help you as i not a pro baker.,,,

most important lesson-lerned is; dont get too excited beating the batter and stop being so lazy measuring the ingredients using weighing scale =)
