what's cookin - RVC or should i say Brown Velvet Cake?


sebab nak dengki korang dan sedapkan hati yang gundah gulana kerana kemerahan kek yang kurang menyerlah, saje je stack kan kek ni tinggi2...padahal bakar dalam loaf pan dapat dua lapis nipis jek...baru la nampak bombastic wah macam sedap je kek dak lin ni....bukan macam ye, memang sodap menjilat sudu! ngehngehngeh....


semalam kan dok ganti puasa kan...sedia maklum lah orang yang tengah puasa ni selera dia macam mana, tiba2 dok meroyan nak sangat sangat dengan Kek Baldu Merah...memang dah lama bookmark resepi and bahan2 pun memang dah beli, tinggal nak beli cream cheese untuk forsting aje...so apa lagi projek RVC la semalam hehe....

the problem is, saya adalah seumur hidup tak pernah makan RVC okeh, yeah i know call me orang duk ceruk mana yang tak pernah makan RVC, very the ketinggalan zaman...makanya bila dah siap tak boleh nak decide rasa dia ok ke x, tapi sedap tu memang la sedap kan...kalau dah letak cream cheese frosting semua benda pun jadi sedap hehehe...untuk mengurangkan rasa bersalah pada waistline ku yang membesar dengan sihat ni cream cheese pun beli yang medium fat aje tapi rasa tetap maintain meletops hehe...

sesi berebut cream cheese frosting dengan mya...mama, mya nak that one..ni..ni..this cream..emmmm...like ice cream mama..yang si omak ni nak sedapkan hati bagi je frosting tu byk2 kat mya walaupun dalam hati meronta nak berebut frosting jugak...ingat2 sikit pinggang awak tu makin melebar ye....hehe....

the verdict:-
1. kek ni rasa memang sedap and moist and a bit spongy, but because i bake dalam loaf pan sebab buat half adunan makanya dia agak menipis sikit...sebenarnya kalau bake the whole adunan pun takde la banyak mana, muat acuan bulat 6" pan aje =)

2. the frosting is to die for baby! just make sure whipping cream tu pukul kejap bagi kembang sikit and beli jenama yang diyakini kesedapannya, amaun gula pun boleh kurangkan tp jangan lupa ayak/tapis dulu ye gula icing tu kala x nanti ketul2 la kejadian frosting korang (bercakap dari pengalaman pahit)

3. Untuk frosting, rasanya kalau buat satu adunan kek better buat frosting tu double...sebabnya nak frost kek ni sangat laaaaa susah ye kawan2...better chilled kejap frosting tu, but still dah sejukkan pun susah jugak...so kalau buat extra frosting letak dalam 2 bekas, satu bekas biar bersih jangan ada crumbs2 kek melekat...dah letak lapisan frosting tebal2 in between cake, sapu keliling kek (akan comot dengan crumbs) then maybe boleh sejukkan kek tu kejap...then after a while boleh sapu the rest of the frosting cantik2 warna putih bersih je..kan? ini pandangan i la...next time nak buat camni pulak...ala..lagipun kalau ada extra frosting boleh lapis banyak2 tebal2 kan....heaven i tell you ;)

4. warna merah ku lebih kepada maroon/brownish aje sebab guna food coloring jenama pasaraya aje uols...so kalau nak dapat warna merah mengancam lagi seksi macam Kak Rima (drooling gila kalau bukak page dia ni tau, drooling tengok kek, props for the food, the house, her kitchen gadget everything lah) sila guna coloring yang berkualiti macam jenama Wilton okey..tak caye tengok hasil pudding fruit koktail i yang jadi kaler maroon ni jugak..

see? dalam pudding ni memang ada santan sikit tapi suppose jadi pink la kan? ni jadi maroon pulak...so memang food coloring yang i pakai ni tak da boom la kemerahannya hehe...

RED VELVET CAKE
also very similar to recipe from here

1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder
1 tbsp red colouring - make sure use a very good quality red colouring to achieve desirable sexy red cake or you might end up using the entire bottle like moi!
1/4 cup soft unsalted butter - 57g
3/4 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 cup buttermilk - I used 1/2 cup whole milk plus 1/2 tbsp vinegar
1/2 tsp vinegar
1/2 tsp baking soda

1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste. (like Rima said, you can add a little bit of water)
3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to ur batter. Stir well with a spatula. Pour into a 6" baking pan and bake it for 50mins or until cooked. (since i baked half the recipe and using a standard size loaf pan, it only takes 25-30 mins for the cake to cooked)
6. Let cool on wire rack.
7. Once cool, slice cake into two and spread cream cheese filling and top it with the rest of your frosting, a bit tricky yes,what with the crumbs starting to mix with your cream cheese frosting and make your cake look ridiculously hideous but who cares as it tastes simply divine =D


CREAM CHEESE FROSTING

125g cream cheese, softened
50g unsalted butter
110g powdered sugar - SIFTED and can be reduced according to your taste
1 cup fresh cream, whipped until stiff - i used double cream

1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. Add whipped cream, stir through with a spatula. Chill for a while before spreading it onto your cake, much more easier when using chilled frosting.

tu la, tau tak sampai saat akhir aku still lagi dok tambah red coloring tp still x merah mak ngah (hehe x tau kenapa mesti mak ngah di kaitkan dgn merah menyala =P)

ko ada post story RVC kt blog x? nk tgk ko pakai resepi mana, mahu study RVC's recipe hehe...

rindu ko juge huhu...xpe lebih kurang 5 bulan lagi i balik okkk.. =)

seriously, this RVC and the frosting recipe is a keeper, i know you'll enjoy it as much as me (and my friends) do =)
