what's cookin - Peanut Butter Cookies (Joy of Baking's recipe)


lama tak masuk entry masak2 kan? punya lah dah lost mojo kata orang..ewah! mojo la sangat padahal malessss nak snap2 gambar and dressing up kan makanan lepas masak ;P

dah lama teringin nak makan biskut kacang ni, tekak ni macam terasa-rasa je..siap beli  peanut butter lagi tu konon nak buat...and that was err..when was it? maybe a year ago? sebab masa korek lemari dapur ternampak la botol peanut butter yang beli dengan penuh semangat dulu tu...tengok2 expiry date May 2012...dang!!

hah lepas tu terus capai butter, check bahan and operasi le apa lagi.. resepi yang bookmark dulu pun dah hilang sebab banyak kali dah mi amor format laptop..oopss! ;P


the verdict: shedapppp!! for all peanut butter lovers sure suka punya..full of peanut taste and quite heavy, more on the rich side...tekstur rangup yang ala2 crumbly, bukan rangup yang macam makan famous amos cookies tu.. makan kena sikit2 sebab makan satu pun dah agak kenyang...bila makan teringat biskut kacang yang masa chinese new year tu =)



Peanut Butter Cookies

3/4 cup (170 grams) unsalted butter, room temperature
1/2 cup (105 grams) light brown sugar
1/2 cup (100 grams) granulated white sugar
1 large egg
1 teaspoon pure vanilla extract
3/4 cup (185 grams) peanut butter (smooth or crunchy) - i used smooth
2 cups (260 grams) all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped peanuts or 1/2 cup chocolate chips (optional)


Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugars until light and fluffy (about 2 - 3 minutes). Beat in the peanut butter. Add the egg and vanilla extract and beat to combine. 

In a separate bowl whisk together the flour, baking soda, and salt. Add to the peanut butter mixture and beat until incorporated. Fold in the chopped peanuts, if using. 
(If the batter is too soft to form into balls, place in the refrigerator for about an hour or until firm.)

Roll the batter into 1 inch (2.5 cm) balls.Transfer the cookies to the prepared baking sheet, placing about 2 inches (5 cm) apart. Then, using the tines of the fork that has been dipped in white granulated sugar, make a crisscross pattern. 

Bake the cookies for about 10 to12 minutes, or until the cookies are lightly browned around the edges. Remove from oven and place on a wire rack to cool. Can be stored at room temperature, in an airtight container, for about a week. Freeze for longer storage.

what's cookin - Great Chocolate Chips Cookies

i love chocolate chips cookies. every time pergi alamanda tak pernah menang dengan godaan bau Famous Amos, its just suddenly i'll realise i was drooling after their freshly baked cookies through the glass display, or ordering my ultimate favourite peppermint ice cream (my friend ada cakap tak pernah jumpa org yg suka peppermint ice cream, pelik sangat kah? sedap apa), or more unfortunately, having both. and then challenge myself driving AND eating the cookies which akan hilang separuh masuk ke perut sebelum sempat keluar dari parking. yes, i'm that selekeh. =P (makan sambil drive - my bad habit yang cuba di hakis supaya tidak menjadi contoh buruk kepada Mya tetapi tidak pernah berjaya, time mengandung lagi teruk ada la huhu..T_T )

oleh itu, selain dari disebabkan saya seorang yang si gigi manis (sweet tooth) dan selalu tidak ada benda untuk di munchies di kala asyik menonton, mari kita buat cookies. this is my 3rd time using this recipe and it never turn me down. for CRUNCHIER cookies, i substitute brown sugar with demerara sugar.

Apa pulak la Demerara Sugar ni kan? sama je gula jugak. nama demerara tu di ambil sempena nama tempat asal gula ni hasil kan, kat Demerara, Guyana.Tekstur demerara lebih besar, crystal-like, smell just like brown sugar. Actually, 'kesilapan' beli gula ni disengajakan sebab masa nak beli brown sugar time tu la dia nak habis kat kedai tu. tengok-tengok demerara ni lebih kurang je so hentam je la (masa ni keinginan nak buat cookies sangat memuncak, kalau tak tido termimpi-mimpi makan cookies - orang yang ketagih baking mesti faham perasaan i,kan?). Balik rumah terus google 'demerara sugar' sebab takut gak tak boleh pakai buat biskut (ceh, dah beli baru takut). walla! memang kalau guna untuk buat biskut adalah untuk merangupkan biskut, dan selalu jugak guna untuk memaniskan teh atau kopi.=D

Great Chocolate Chips Cookies
Recipe adapt from 101Cookbooks.com (source from David Lebovitz's Great Book of Chocolate)

1/2 cup (100 grams) granulated sugar
1/2 cup (120 grams) firmly packed light brown sugar -
i substitute with demerara sugar for crunchier cookies
8 tablespoons (1 stick) (115 grams) unsalted butter, cold, cut into 1/2-inch (1cm) pieces
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 1/4 cups (175 grams) all-purpose flour
1/4 teaspoon salt
1 1/2 cups (200 grams) semisweet chocolate chips
1 cup(130 grams) walnuts or pecans, toasted and chopped

1. Pre-heat oven 150C.
2. Beat both sugars and butter until smooth. Mix in egg, vanilla, and baking soda. Stir together the flour and salt, then mix them into batter. Mix in chocolate chips and nuts.
3. Scoop the cookie dough into 2-tablespoon (5cm) balls, spaced 4 inches apart. Bake for 18 minutes until golden brown. For chewy cookies, bake until pale brown. Remove from oven and cool on wire rack.
4. Be prepare to store your cookie jar far far far away to the most hidden place possible in your cabinet. hehehe... =)

what's cookin - Butter Cookies


Episod What's Cookin kali ini adalah - Biskut Mentega cair di mulut bukan di tangan..nyum nyumm...

I've came across this recipe from Nasi Lemak Lover blog and immediately feel a tingle sensations from my stomach and the last thing i know i was menggelintin keterujaan melampau - i must try this. And it was just because the ingredients call for corn flour, apart from the gorgeous picture of the biscuits.

Iya, saya adalah sangat suka biskut old-skool. And to make the most-butterly-flavoured butter cookies ever you must invest in the most expensive butter you can find in store. Trust me, the moment those cute puffy lil babies popped in the oven, you'll won't regret that. The butterly aroma is just so intimidating. And that's explain why i keep constantly put those babies into my mouth the moment they come out from the oven. Ngeh ngeh ngeh...

kacau-kacau adunan...nampak butter mahal tu? Butter paling mahal pernah i guna untuk membaking, sebuku RM7.50 hoh! Gilo! tak sia-sia pesan kepada hubby 'tolong belikan butter tapi mama tak nak butter jenama supermarket, dlm erti kata lain, i nak butter mahal,OK? cepat!' hehe takdelah skrip telah diubah tiada kenAmengena dengan yang hidup ataupun yang telah tiada. LOL.

Alasan terbaik nak buat biskut ni adalah nak buat untuk Mya, biasalah kan biskut cam ni kan baby-friendly..hehe...tapi macam biasa juga yang banyak adalah masuk mulut mama..hohoho..dah nak abes pun...takpe, utk kawan-kawan yang ada baby maybe boleh try buat..sekali sekala tukar selera dari teething biscuits jenama Farleys tu...

Kesimpulannya - Biskut ni memang sedap terbaik cair di mulut rangup lemak masin kau memang da bomb! hehe..
boleh di senarai hitamkan eh silap boleh di senarai pendek into my raya cookies list! (heh heh raya lambat lagi pose pun tak abes ganti lagi =P )

Butter Cookie (makes 50pcs)

Butter 200g *guna butter mahal sahaja okeh =)
Gula Icing 50g
Tepung 150g
Tepung Jagung 50g
Chocolate chips *i tak guna sbb tak ada

1. Pukul butter dan gula icing sehingga gebu.
2. Masukkan kedua-dua tepung, kacau perlahan sehingga menjadi doh lembut.
3. Buat bola-bola kecil, tekan kris-kros guna garfu. ATAU nak cantik macam Nasi Lemak Lover, masukkan adunan dalam paip icing dan paipkan adunan ikut corak kegemaran. Hias dengan coklat chip.
4. Bakar dalam oven yang dah dipanaskan 180C, 13-15 minit atau sehingga masak.

what's cookin - the best butter cookies


kepada sesiapa yang mengenali diri saya mesti tahu kuih kegemaran saya adalah yang berbaur tradisi, atau dalam kata lainnya 'kuih taste orang tua'...contohnya seperti suji, biskut arab dan termasuklah butter cookies... so after a few research i found this recipe from recipezaar.com, the best butter cookies recipe (that's what they claim themselves)..for recipe and method please click here..

amazingly, i found the cookies still menggebu walaupun tanpa kehadiran ejen penaik..and sadly a few pieces of my cookies slighly burned a bit especially those yang parked kat belakang2 oven dekat dgn kipas tuh..adakah kerana oven ku yg kepanasannye merakuskan? so, sekiranya anda berminat utk mencuba be carefull not to burned these baby out ya kawan2...and please be patient coz the dough is super-sticky, maybe that's why we have to let chilled for a few hours before bake...



hasilnya sangatla sedap, just like my preference on how i want my butter cookies to be...crisp, buttery, not too sweet and kinda melt in your mouth..hmm hmm....mya pun suka, lemak2 gitu...and surprisingly papa mya pun makan you, cicah teh o lagi..haha being that 'kicap boy' selalunya jarang dia nak rasa apa2 resepi baru yang saya buat walaupun dia suka jugak makan kek and cuppies...macam hari tuh masa try buat scone..

me: 'papa, papa hari ni mama try masak scone..sedap tau sukanye2 try terus jadik..papa rasala rasala..' dgn mata bersinar ke-excited-an dan aksi gedix..
him: 'hah, apo? sekoi?..apobondo eh tu?..'
me:'wth...kj@#9ks@#..se-kon la papa, scones(wif english accent haha)..english style punye kuih selalu diorg makan utk bfast or tea..papa ni..' muka muncung cencorot huhu...

haha kesimpulanya kalau nak masak apa2 tunggu request dari big boss, konfem dia akan makan..

ok back to the story, tak tau la uols suka ke x makan biskut butter nih atau saya je yang bertaste granny..tapi kalau nak try buat it is highly recommended ya...till then, bertemu lagi di lain episod dgn resepi baru yang lebih gereks...ahaks! =P
